Hi Juanita, I make these as a side dish for pork. Also as a healthy dessert.
Baked Apples 4 medium apples 1/2 cup raisins or mixed dried fruit 2 tablespoons brown sugar 1/2 tsp. cinnamon 1/4 tsp. nutmeg 1/3 cup apple juice or water
Core apples and peel a strip of the top of each apple. Place apples in a 2 quart casserole. Combine the remaining ingredients EXCEPT apple juice or water. Spoon into center of each apple. Add apple juice or water(I prefer the juice). Bake in a 350^F oven for 40 to 45 minutes or til apples are tender, basting occassionally with the juice or water. Serve warm.
Applesauce 3 pounds apples (about 9 medium) 1 cup water 1/3 to 2/3 cup sugar 1/4 tsp. cinnamon or 2 whole cinnamon sticks
Core, peel and quarter apples. In a heavy pot, place apples, water, sugar, and cinnamon,if desired. Bring to a boil and reduce heat. Cover and simmer for 8 to 10 minutes or til apples are tender, adding more water if necessary. Remove from heat and mash with a potato masher or process in blender or food processor to desired texture. Serve warm or chilled. I also freeze applesauce in ziplock bags allowing about 1 inch for head space. Makes about 4 and 1/2 cups. Note: Most of the time, I triple this recipe to make it worthwhile. |
