This is one of my all-time favorite apple recipes. The recipe is from the Farm Journal Country cookbook.
Nobby Apple Cake
3 Tbsp. butter or margarine 1 cup sugar 1 egg, beaten 1 cup flour 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1/2 tsp. nutmeg 3 cups diced apples 1/4 cup chopped nuts 1 tsp. vanilla
Cream butter and sugar: add eggs; mix well. Add dry ingredients to creamed mixture. (This batter will seem very stiff--it's supposed to be that way--once you add all the apples it gets alot of moisture from the apples!!) Stir in diced apples, nuts and vanilla. Pour into greased 8 x 8" pan. Bake at 350° 40-45 minutes. It's very good warm with ice cream!!
The other recipe I have for you sounds weird, but it's very good. It's a unique way to use apples. It is a squash dish with apple chunks--I know it sounds yukky, but I've had people eat this who thought they HATED squash and they end up asking for the recipe!!! Give it a try--it's a great winter time vegetable casserole and works well for those pot luck suppers when your letter of the alphabet has to bring a veggie dish!! This recipe comes from the Betty Crocker cookbook.
Squash and Apple Bake
2 pounds butternut or buttercup squash 1/2 cup packed brown sugar 1/4 cup margarine or butter, melted 1 Tbsp. flour 1 tsp. salt 1/2 tsp. mace (I use nutmeg--it's related to mace anyway) 2 baking apples, cored and cut into 1/2" slices
Peel squash, take seeds out, etc. Cut into 1/2" slices. Mix all the dry ingredients with melted butter. Arrange squash slices in 11 x 7 baking dish. Top with apples slices. Sprinkle with sugar mixture. Cover with foil and bake 50-60 minutes or until squash is tender.
Hope these two recipes help use up some of those apples--I can't wait for apple season myself. Although here in New York our best apples don't come until October. Kar
