I had some french bread that I needed to use, so for Sunday brunch we had french toast. But not your normal everyday version . I cut slices about one inch thick and then cut a pocket about 2/3 of the way through the slice.
Put a slice of pepper cheese in the pocket, mixed up the eggs and milk and added some basil,freshly ground black pepper and a little garlic powder. I soaked the bread really well in the egg mixture and browned it slowly in a skillet. When it was browned and crispy and the cheese had melted, I served it with salsa. Really good.
