Here's an easy, refreshing lemon cake: 1 Yellow Cake mix 1 Small box lemon jello 1 Cup hot water 3/4 Cup oil 4 Eggs 1 teaspoon lemon extract Icing: 1 Cup powdered sugar 1/4 cup lemon juice Dissolve lemon jello in hot water; cool. To cake mix add oil and eggs (one at a time), lemon extract and cooled jello. Bake at 350 degress for 1 hour if using a bundt pan; 35 minutes if using a 13 x 9 flat baking pan. Pour icing onto cake while warm.
