Crepes -------------
For 4 crepes:
2 eggs 1/3 cup milk 1/4 cup flour 1/8 tsp. salt
Heat non-stick pan on high. Pour 1/4 of the batter into pan and swirl slightly to cover the bottom of the pan thinly. Flip when dry on top by just grabbing an edge and quickly flipping. It's as easy as that! They can be stacked between sheets of waxed paper and frozen for future use. They can be filled with a sweet or savoury filling then rolled up. Serve warm with garnish of fruit or veggies depending on which filling you use.
