Here is a recipe from the Mennonite Church in Paso Robles,CA cookbook, from Gertrude Claassen
BANANA CREAM PIE
2 c. milk 1 c. sugar 4 level Tab. flour pinch of salt 4 eggs 1 tsp. vanilla 3 or 4 bananas 1 Tbl. butter few drops lemon juice 4 additional Tbls. sugar for meringue 1 baked pie shell
Heat milk; add sugar and flour, which have been blended. Cook over low heat; add beaten yolks. Add 2 tablespoons milk to the beaten egg yolks. Add this to milk mixture and cook for several more minutes. Add 1 Tables. butter; set aside. Peel and slice 3 or 4 bananas depending on size. Place in baked pie shell. Sprinkle a few drops of lemon over bananas to keep from turning dark. Now, pour the cooked mixture over the bananas. Beat egg whites until very stiff. Fold in 1 Tbls. of sugar for each egg white. Spoon beaten mixture over the cream and banana mixture. Place in oven at about 350 deg., until lightly browned.
