Here are a few rhubarb recipes you could try!Rhubarb Crunch
4 c. rhubarb 2 T. flour 1-1/2 c. sugar
Sprinkle sugar and flour over rhubarb and top with the following mixed until crumbly.
1 c. flour 1/2 c. white sugar 1/2 c. brown sugar 1 c. oatmeal 2/3 c. butter 1/2 tsp. baking powder
Bake slowly for 1 hour at 350°.Fresh Rhubarb Cake
1-1/2 c. brown sugar 1/2 c. shortening 1 egg 1 c. butter milk or sour milk 1-1/2 c. rhubarb (cut in small pieces) 1 tsp. vanilla 1 tsp soda 2 c. flour
Mix all together and spread in 9x13 pan.
Mix the following and sprinkle over cake: 1/4 c. white sugar 1 tsp. cinnamon
Bake at 350° until toothpick comes out clean. Serve with whipped cream.Rhubarb Punch
A blue canner full of rhubarb, cover 1” from top with water. Cook until mushy and strain if desired.
To the juice add 5 c. sugar, 1 box lemon jello, 3 boxes red jello and cook until hot. Put in jars and seal. I let it get cold and then froze it in ice cream pails. When ready to use for punch, thaw and add 7-up to taste. Also can add 3/4 c. vodka to batch. Makes a good refreshing drink.
