BAKED CHICKEN B.B.Q.
INGREDIENTS: 2 - 3 Lbs Chicken Parts (skin optional) 1 1/2 Cups± B.B.Q. Sauce (your favorite) 12oz Can Beer (divided use)
INSTRUCTIONS: On an outside grill, sear the chicken until browned on the outside (not cooked done - just browned)
Pre-heat oven to 325º while the chicken is browning.
When chicken is browned, arrange the pieces in a 3 inch deep roasting pan (rack optional)
Pour 1/2 can of beer over the chicken, then 1 cup BBQ sauce.
Coverand bake in 325º oven, for 1 hour.
After 1 hour, remove from oven and pour the remaining beer and BBQ sauce over the chicken.
Continue baking - uncovered - for an additional 30 to 45 minutes or until the chicken is done and tender, baste occasionally with juices from the baking pan.
SERVE: Right from the pan, spooning the sauce/juices over the meat.
As a matter of fact that is what we are having tonite, with baked potatoes, baked with the chicken and corn on the side-- Nuff Sed!!
SUGGESTION: Use aluminum throw away pan, to eliminate the clean-up of baked on BBQ Sauce.
I like the disposable aluminium 9 X 13 X 3 inch steam-table pans, works great, plenty of room and NO MESS!! (they even have covers for them)
