Molly, I add an egg, a little flour and baking powder, onion salt or chopped fresh onion, and a little more salt and pepper. All of this is basically to taste depending on how much you have left over. Stir it all together and fry on a griddle or skillet in a little butter or something like Pam spray until brown on both sides. This is how my grandmother made potato pancakes. My family loves them.
