Here is an easy casserole dish called SURFSIDE BROCCOLI CASSEROLE:
2- 10 oz. pkgs. frozen broccoli (not the chopped kind - the whole kind)
1 cup crushed Wheat Thins or similiar crackers, 1-10 3/4 oz. can cream of celery soup, 1/4 cup of that same can of water, 1 cup shredded cheddar cheese.
Rinse broccoli to separate, then place broccoli and all remaining ingredients in a four quart casserole. Cover and bake in a preheated 350 degree oven for approximately one hour. Allow to sit twenty minutes before serving.
Also, how about a BLENDER AVOCADO CHEESECAKE? Here it is: Crust:
1 1/4 cups graham cracker crumbs, 2 T. sugar, 3 T butter, melted. Mix together and press mixture evenly into bottom of 9" springform pan. Bake 7 to 10 min.
FILLING: Blend together: 1 pitted and peeled ripe avocado, 1 8oz pkg. softened cream cheese, 1/2 c. sour cream, 3 thin strip lemon peel. Blend til smooth then add 1 pkg. instant vanilla pudding. Blend and pour into prepared crust. Chill several hours before serving. One last idea...how about a tray of green raw veggies (with a green dip). Take celery sticks, sliced fennel, scallions, sliced green peppers, sliced cucumbers and arrange on platter with some green olives for garnish. Then take 1-10oz pkg.frozen cooked well drained spinach, 1/2 c. finely chopped parsley, 1/2 c. fresh chopped basil, 2 chopped scallions & puree in blender, then add 1 1/4 cup mayo, blend again and there's the green dip. Delicious! Good Luck!
