Here are a couple recipes for Apple Cheddar Quiche. Enjoy!
APPLE-CHEDDAR QUICHE
1 Tbsp. chopped onion
6 Tbsp. butter or margarine
1 1/4 c. crushed stone-ground,
whole-wheat crackers
1/4 c. finely chopped walnuts
2 large tart apples, peeled,
cored and sliced (2 c.)
3 eggs
1 c. cream-style cottage
cheese
1 c. shredded Cheddar cheese
1/4 c. milk
ground nutmeg
Cook onion in butter until tender. Stir in crackers and
nuts. Press into 9-inch pie plate, forming crust. Bake in
oven at 350 degrees for 8 to 10 minutes. Simmer apples in small
amount of water for 3 to 5 minutes until tender. Drain.
Arrange apples in crust. In blender, blend eggs, cheese, milk,
1/2 teaspoon salt and dash of pepper until smooth; pour into
crust. Sprinkle nutmeg on top. Bake in oven at 325 degrees for 45
minutes or until fork comes out clean. Let stand for 10
minutes.
APPLE CHEDDAR QUICHE
3 apples, peeled and diced
1 1/2 c. sharp Cheddar, grated
1 c. cottage cheese
1 1/2 c. half and half
4 eggs (2 yolks)
1 tsp. sugar mixed with 1/4
tsp. cinnamon
1 (10-inch) pie crust
Saute apples in 3 tablespoons butter for 5 minutes.
Spread in a partially baked pie crust and top with Cheddar
cheese. Beat together eggs, cottage cheese and half and half.
Pour over apples. Sprinkle with cinnamon/sugar mixture and a
pinch of salt. Bake at 375 degrees until custard is firm.
