This is a very old recipe I got from my neighbor who was nearly 80 then. He had had it for years. Make a white sauce: 13/ pound butter, 2 tablespons flour, 1 cup milk, 1 cup evaporated milk. Set this aside to cool. Puree 1 pound uncooked chicken livers in the blender. Add the livers to the cooled white sauce and add: 3 eggs, 2 tablespoons onion juice, 3/4 tablespoons white pepper, 1 tablespoon salt and 1/2 teaspoon allspicie. Beat entire mixature 1/2 hour, lifting beaters every ten inutes to rinse off the stringymatter. our into well buttered loaf pan. Place in pan of shallow water and bake 1 1/4 hour at 350 degrees. let cool in load pan, but remove from water pan. |
