Funny you would request that tonight. My husband just started some this afternoon. Here are a few for you from Dehydrated and Delicious, the book that came with ours.
Ranch Style Jerky
1 tsp. pepper
1/2 cup soy sauce
1-2 cloves garlic, crushed
2 tbl. cider vinegar
1 tsp. snipped chives
2 lbs round, flank, or other lean cut meat.
Mix marinade ingred. together in abowl. Dip meat slices into marinade. Place dipped meat in layers in a bowl or a dish. Pour marinade over meat. Cover and let marinate in fridg for 6-12 hrs. Rotate layers occasionally. Place in dehydrator until dry. While meat is drying, blot excess oil with paper towels.
My hubby shops for meat on sale to make jerky. What he found the other day was a round rump roast. Sometimes he smokes the marinared meat for a little while, just to get that extra flavor.
Teriyaki Jerky
1/2 cup teriyaki sauce
1/4 tsp salt
1/4 tsp pepper
1/2 tsp ground ginger
2 tbl brown sugar
1 clove garlic, crushed
2 lbs, round, flank, or other lean cut of meat
and do the same as above.
Western Jerky
4 tsp salt
1tsp each, chili powder, garlic powder, and onion powder
1/4 tsp cayenne
3 dashes liquid smoke
1/2 cup water
2 lbs round....etc.
