Credit for this wonderful treat must go to Louise Schwaiger, who is/was the Pastry Chef at The Grand Hotel, Mackinac Island, Michigan. The purchase of the handwritten cookbook alone was worth the trip. 2 squares unsweetened chocolate, melted and cooled 1/4 pound butter 1 scant cup sugar 2 large eggs 1 pinch salt 1/2 cup flour 1 cup mini marshmallows (I don't use) 1/2 cup chocolate chips 1/2 cup nuts, pecans or walnuts 1 teaspoon vanilla
Preheat oven to 350 degrees
In a mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs, vanilla, chocolate, salt, flour, marshmallows (if desired), chocolate chips and nuts. Mix well. Pour into a 9 inch square baking pan, greased and floured. Bake for 28 to 30 minutes. The center will be quite moist.
Optional Glaze: 1 cup heavy cream 8 ounces, finely chopped semi-sweet chocolate
Bring the heavy cream to a boil. Remove from the heat and add the chocolate. Whisk until blended. Spread the glaze over the cooling brownies and garnish with chopped nuts, either pecans or walnuts.
I've never tried the brownies without the glaze but I can't imagine they wouldn't be great.
If you love chocolate and don't worry about the calories, you will really enjoy this. |
