This is one of my hubby's favorites, it's pretty easy to do too. Hope you like it.

Chicken Parmesean
Serves 2

2 Boneless, skinless chicken breasts
2 teaspoons dijon mustard
1 large egg white
1 tablespoon olive oil
1/3 cup italian breadcrumbs
2/3 cup prepared spaghetti sauce
1/3-1/2 cup mozzerella cheese, shredded (any cheese will do, whatever you like)

Preheat oven to 350 F. Heat oil in a nonstick skillet over medium heat. Beat together mustard and egg white. Dip chicken breasts in egg/mustard mixture. Then dip in breadcrumbs. Place chicken in oil and cook 6-8 minutes per side until golden brown and almost completely cooked through.

For this next step, if your skillets can be put in the oven do that, if not then transfer the chicken to an ovenproof baking dish.

Pour 1/3 cup spaghetti sauce over each breasts (or as little or as much as you like). Then sprinkle each breast with cheese. Bake at 350 F for 5-10 minutes or until cheese is melted and bubbly.

I ususally serve this with parmesean risotto.
