Here you go Nels;
PEPPER CABBAGE
This must not be confused with coleslaw. This is a cabbage salad that is popular in Pennsylvania. It is very tart and not at all creamy.
Vegetables:
1 pound green cabbage, shredded
1/2 cup finely chopped green pepper
1/2 cup finely chopped celery
1/4 cup grated carrot
Dressing:
1/2 cup cold water
5 Tbsp. white vinegar
1/4 cup sugar
1 tsp.salt
pepper to taste
Combine all the vegetables in a bowl and toss well.
Combine the dressing ingredients in a medium bowl and stir till all the sugar dissolves. Pour over the cabbage mixture and toss together. Cover bowl tightly and marinate in refrigerator for several hours or overnight before serving. Toss and taste for seasoning. Will keep in fridge for several weeks.
I have made this and it was very good, kind of like the slaw you get in some german restaurants.
