Strawberry Pie
Baked 9" pie shell or baked graham cracker crust.
1 1/2 qt. strawberries
3 1/2 TB cornstarch
1 c sugar
1/2 cup water
1 TBs butter
1 cup whipping cream
2 TB sifted powdered sugar

Hull, wash and thoroughly drain berries. Crush enough to make 1 cup pulp. Save the rest and place them whole in the baked crust.
Combine sugar and cornstarch. Stir in 1 cup crushed berries and the water. Cook over medium heat, stirring constantly until mixture comes to a boil.Continue for 2 min.
Remove from the heat and stir in the butter. Cool. Pour over berries in the pie shell. Refrigerate about 2 hours.
Serve topped with whipped cream to which has been added the powdered sugar.

I use either of these recipes.
