The second recipe is very special and great for company, but easy too.
Easy No-Bake Cheesecake
Make up a Jiffy Cake yellow cake mix and bake in a sponge tort layer pan.
8 oz. cream cheese small container Cool Whip 1 cup confectioner's sugar 2 tsp. vanilla
Beat above till well mixed and very smooth, and spread over sponge tort cake layer. Top with Blueberry Pie filling.Ladyfinger Cheesecake (This is excellent for company and very dramatic!)
2 pkg. plain (not filled) ladyfingers
2 - 8 oz. cream cheese 2/3 c. sugar 2 T. vanilla
1 pint heavy cream, whipped
Line the bottom and sides of a large spring-form pan with the ladyfingers. Make it so that cut sides face inward on the sides, and up on the bottom.
Then beat the cream cheese, sugar and vanilla until very smooth.
In a separate bowl, beat the heavy cream and then fold into the cream cheese mixture carefully, until thoroughly blended. Carefully pour this on top of the ladyfingers, and spread all around until evenly touching the ladyfingers on the sides. Top with any pie filling, cherry or blueberry is beautiful.
Refrigerate at least a full day or overnight, covered with wax paper, or plastic wrap. Remove sides of the spring-form pan, leaving the dessert on the bottom. Place dessert onto a pretty serving plate and bring to the table for slicing and serving. You will need a wide pie server since this is a softer mix than a baked cheesecake, and the slices will go on their sides, rather than standing up. Note: Let the completed cake set up in the refrigerator for quite a while before putting the pie filling on top. The filling is quite soft at first, and it's kind of touchy if you try to spread the pie filling on then!
