This is something I sometimes make for my husband so he can eat on the way to work. It's a recipe a friend gave us.
Eggs McChisholm Take a microwave muffin container, spray it with Pam, and put a piece of luncheon ham in the bottom. Lightly beat an egg, pour it in over top, and microwave on high about 45 seconds. Stir, microwave about 15 seconds more, then put a slice of cheese on it and zap until slightly melted. Let sit a minute while you butter a hamburger bun or toast some bread. Can eat in the car on the way to work. Can leave out the ham. Another recipe is what we called a "Ham Quickie" at HoJo's. Cut up some leftover ham, fry it a minute or two in butter in a skillet, then pour scrambled eggs over top , cook, and serve with toast. Can also have green peppers and onions added for a western omlet. You can also do these in the microwave to be even quicker. Make biscuits on the weekend, and reheat in the microwave, if you are tired of toast.
My husband also likes English muffins and bagels with marmalade or jelly or honey during the week, to eat in the car on the way to work. It's a little special, but fast.
