Coffee Liqueur

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups water 1 1/2 cups sugar 1 1/2 cups packed brown sugar 1/3 cup instant coffee crystals 1 fifth vodka 2 teaspoons vanilla
Combine water, sugars and coffee crystals in a saucepan. Bring to a boil, stirring often. Cool 10 minutes. Add vodka and vanilla. Store in a dark place for 2 weeks.

Galliano

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups sugar 1 cup water 4 teaspoons pineapple extract 3 teaspoons vanilla 2 teaspoons banana extract 2 teaspoons anise extract 5 drops yellow food coloring 1 fifth vodka
Pour sugar and water into a large container. Add extracts, vodka and food coloring. Mix until the sugar has dissolved. Ready for use immediately.

Grand Marnier Liqueur

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup sugar 1/3 cup water 1 cup or less honey 2 tablespoons orange extract 1 tablespoon glycerin 3 cups brandy or Cognac
Place sugar, water and honey in a large saucepan. Heat until sugar has dissolved completely. Remove from heat and cool until just warm. Add the remaining ingredients and blend well. Bottle and cap. Age for several days. Shake before serving.

Kahlua

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups water 4 cups water 2 ounces instant coffee 2 cups Brandy 1 whole vanilla bean
Bring water to a boil; mix in sugar and coffee. Cool to just warm. Add brandy. Cut vanilla bean in half lengthwise and drop into a clean, dark colored 1/2 gallon bottle. Pour in the liquid. Cap tightly and store in dark place for 30 days. Strain through cheese cloth to remove sediment and vanilla bean seeds. Pour liqueur back into bottle. Makes 2 fifths.
