Hope it's not too late--Mom makes this in a sheet pan but I see no reasonit couldn't be made in a bundt pan with adjustment to time for thickness. Be sure and check out the icing the coffe makes it great.

MOM'S BANANA CAKE

Amount Measure Ingredient -- Preparation Method

2 cups butter
1 1/2 cups sugar
2 large eggs
2 cups flour
1 teaspoon baking powder
3 ripe bananas -- crushed
2 cups buttermilk
1 teaspoon soda

Beat (DO NOT CREAM) together the eggs, butter and sugar.
Add bananas. Stir well.
Add flour, baking powder, buttermilk and soda.
Beat well. Pour into 3 round cake pans or 9 x 13 inch pan sprayed with cooking coil spray.
Bake at 350 degrees for 20 to 25 minutes or until top springs back when touched.


BANANA CAKE ICING

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 box powdered sugar
2 tablespoons butter
5 tablespoons strong, black coffee
1 teaspoon vanilla

In mixing bowl mix the butter, sugar and vanilla.
Add enough of the coffee to achieve thick spreadable consistency.
Beat on high until fluffy. Spread on cake.
If using 9 x 13 pan pour on while cake is hot.
