Pork Chops with Apples And Raisins
3 slices bacon 6 large loin pork chops Salt and pepper to taste 3 apples, cored, peeled, and coarsley chopped 1/3 cup light brown sugar 2 TB. All- purpose flour 1 cup water 1 TB. Cider vinegar 1/4 tsp. Sage 1/2 cup seedless raisins
In a large, heavy skillet, fry the bacon till crisp. Drain on paper towels and crumble.
In batches, brown the pork chops on both sides in bacon fat, adding a little vegetable oil if necessary. Arrange the chops in a large baking dish. Season with salt and pepper. Divide the chopped apples equally over them and sprinkle with the brown sugar.
Preheat oven to 350°.
Add the flour to the fat in the skillet and stir over moderate heat 1 minute. Add the water, vinegar and sage and cook till thickened, stirring. Add the raisins and crumbled bacon, pour the mixture around the pork chops, cover with foil and bake 1 hour.
