Katheen: Here is a recipe for baked pancakes with apple topping. I know you asked for one with cheese and bacon coping; hopefully the baked pancakes are like the ones you had and you can substitute cheese and bacon topping for the apple topping.
BAKED PANCAKES WITH APPLE TOPPING
2 Eggs 1/2 C Egg Beaters® 99% Egg Substitute Or Equiv To 2 Whites 3/4 C All-Purpose Flour 3/4 C Nonfat Milk 1/2 Tsp Vanilla Nonstick Cooking Spray *NOTE: The original recipe uses 1 1/2 T light margarine. Nonstick Cooking spray works great.
Apple Topping: 3 Tbsp Honey 1/4 Tsp Cinnamon 1/8 Tsp Nutmeg 3 Grated Apples, Peeled For the pancake:
Preheat the oven to 450 deg F.
In a bowl, beat the eggs, egg beaters (whites), flour, milk and vanilla until smooth; set aside.
Spray a non stick round 12" baking dish with the nonstick cooking spray.
Put it in the oven to heat for about 5 - 7 minutes. When the baking dish is hot, remove it carefully and pour in the batter and put it back into the oven for 15 minutes. After baking for 15 minutes; lower the temperature to 350 deg F and bake for an additional 10 minutes.
While the pancake is baking for the first 15 minutes, prepare the apple topping: In a large skillet, combine the honey, cinnamon and nutmeg. Warm over medium heat until the honey liquefies and mixes with the spices. Add the apples and heat them until just tender.
The pancake should have puffed dramatically, especially around the sides. Serve immediately, with the topping, before it settles. Serves: 4
