Found this in TKL "ABM" recipe archive. There are a couple more. Go to "Hot Spots" and pick ABM site. Hope it helps even though it is not exactly what you are wanting.
WINTER VEGETABLE BREAD---1 1/2 lb. loaf
2 t. active dry yeast 1 3/4 c. + 2 T. bread flour 3 T. rolled oats 1 1/2 c. whole wheat flour 1 1/2 t. ground ginger 1 1/2 T. sugar 1 1/2 t. salt 1 1/2 t. vegetable oil 3/4 c. water 3/4 c. grated carrots 3/4 c. chopped canned beets
1. Add all ingredients except the carrots and beets. 2. Add carrots and beets during second kneading. 3. Bake on basic bread cycle.
Marie's tips: This is a very dry dough in the first knead. Add a little beet juice or water while kneading. Add beets at end of first knead cycle. Add carrots at end of first knead. Chop beets in medium pieces, too small with become mixed into the dough and no red specks in the finished bread. The red and orange specks make a very pretty loaf. Flavor is great and this loaf is very light. This helps add moisture.
