Mix shredded beef with about 1/2 cup picante sauce and 1/4 cup water in skillet. Cook down. You can also add a little taco seasoning. Heat tortillas in oil, dip in enchilada sauce (Old El Paso makes good sauce--has a little bite to it), fill with beef mixture, place in baking dish and cook at 350 for 15-20 min. Top with Jack or your favorite cheese and bake 5 min more.
