This is a good hearty soup that's best served with crisp rolls or bread.
PORTUGESE SOUP Soak one package of beans: red kidney, pinto, navy, black eye, garbanzo, or combination in 2 quarts of boiling water for 1 hour. Add 2 large onions (chopped), 2 small meaty ham bones or ham hocks. Add 1 Tbs salt. Simmer 2 to 3 hours. Remove bones and cut off meat. Add: 2 stalks celery, sliced 2 carrots, sliced 2 potatoes, peeled and diced 1 small cabbage, shredded 1 Portuese or Linguease sausage, sliced 1 slice ham, cubed or shredded 1 can of tomato sauce (16 oz) 3 tomatoes peeled and chopped or 1 can of tomatoes, chopped or mashed garlic puree to taste. Simmer while preparing and adding vegetables, then cook slowly for another 1/2 hour or so.
