My parents have a smoker, and their favorite thing to do is smoke
turkey using maple chips. They have a special tactic, too. They
smoke the turkey for less than the time required (maybe 3 hours
for a 10 lb bird) , then Mom transfers it to a Dutch oven and
finishes it in the oven until the meat thermometer pops up. This
way, you get some pan drippings to make smoked turkey gravy!
I'm sure the book that came with your smoker contains a recipe
for turkey. You will have to check the approximate smoking times
for your smoker...they may be different than what I am telling you!
Use your imagination and give this a try if you like. It is a little
more labor-intensive, but it is well worth it to have this lightly
smoked bird with a wonderful gravy. All I know is that I have
never had finer turkey anywhere!
