These potatoes go especially well with the Beef Fillets in Flaky Pastry -
DIFFERENT BAKED POTATOES
Baking potatoes (one per person) Butter, melted Salt Freshly ground pepper
Peel baking potatoes and slice crosswise into 1/8-inch thick slices, but not all the way through the potato. Roll potatoes in melted butter and sprinkle with salt and pepper. (Any remaining butter can be drizzled over potatoes.) Bake in a buttered, covered casserole at 350 degrees for 30 minutes; uncover and bake 45 minutes more. Sprinkle with paprika, if desired.
