Homemade Brown Bread Ice Cream INGREDIENTS
397 gramme tin of condensed milk 200 millilitres / 8 fluid ounces double cream 110 grammes / 4 ounces brown bread crumbs 110 grammes / 4 ounces soft brown sugar 1/2 teaspoon ground cinnamon
Place the unopened tin of condensed milk in a saucepan and cover with water. Bring to the boil and simmer for 2.5 hours (DO NOT ALLOW TO BOIL DRY). Leave to cool overnight. Mix the crumbs, sugar and cinnamon and spread onto a baking tray. Toast in the oven or under the grill until caramelised, stirring occasionally to coat the crumbs. Leave to cool and break into loose crumbs again. Lightly whip the cream, mix in the condensed milk and the crumbs and heap into a sealable plastic tub. Freeze until well set and serve with fresh strawberries or whatever takes your fancy.
