This is a great salad recipe. It tastes better if you make this the day or evening before you need it, and then chill it until the next day. Be sure to stir it well to mix the dressing well.
Greek Country Salad
8 large ripe tomatoes, chopped 2 medium red onions ( or vidalias ) chopped 2 cups Greek black olives 1 1/2 cup feta cheese, crumbled 2/3 cup dark green olive oil 2 lemons, juice only ( about 2-4 tsp.) 4 cloves garlic,minced 2 TBSP. oregano 2 TBSP. capers 1 tsp. salt 1/2 tsp. pepper, ground
In a large bowl, soak the chopped red onion in cold water for 1 hour- change the water after 1/2 hour. Discard the water ( drain well ). Add the chopped tomatoes, black olives and feta cheese. Place the olive oil,lemon juice,capers,garlic,oregano,salt and pepper in a blender or food processor, and blend or process until well combined. Pour the dressing over vegetables. Yoss well. Serve with bread.
