Dear Barbara, I know this might be a little late, but you really should try this, it's excellent!!

Pineapple Dip or Dressing for Fruit

1 cup pineapple juice
1/4 cup lemon juice ( strained if fresh)
1/2 cup sugar
2 TBSP. all-purpose flour
2 beaten eggs
1 cup whipping cream, whipped

Whisk flour and sugar into the eggs.
Combine the pineapple and lemon juices in a large stainless bowl.
Add the egg mixture, stir well, and place bowl over pot of hot water.
Whisk for 3-5 minutes, until thickened.
Remove bowl from pot and put custard into a clean bowl. Cover bowl with plastic
erap and chill thoroughly for at least 1 hour.
Fold chilled custard into the whipped cream.
Serve with cleaned fruit or chopped fruit ( for salad ).
This is very mild and not too sweet. I think you'll like it!! :0)
