and I often take it to potlucks as a change of pace. People who HATE cooked spinach really like it this way!

Spinach Salad (leave amounts up to you, depending on number to serve.) Estimate about a heaping cup and 1/2 per person.

Spinach leaves, well- washed, drained, and torn into bite-size bits.
Several strips of bacon, cut into 1-inch pieces, cooked and well-drained
A red onion, sliced in rings, soaked in ice water for awhile and drained and patted dry
Half a dozen mushrooms, cleaned and sliced
Half cup of croutons (like garlic and cheese) to your taste
Your favorite Italian dressing.

Tip:-Carry the salad ingredients, except dressing, tossed together in a good-sized plastic bag. Just before serving, add the proper amount of dressing, close top of bag, and shake. This eliminates wilted salad lying in a pool of salad dressing.
