Stuffed Anaheim peppers (two recipes in one)
4-6 Anaheim peppers 1-2 small red, hot chili peppers 1-2 small green, hot chili peppers 5 oz cream cheese, softened 5 oz feta cheese, crumbled freshly ground pepper
Cut stalk end of Anaheim peppers and remove seeds. Split small chili peppers, remove seeds and chop them finely. Put cream cheese and feta cheese in bowl and combine well (or use food processor). Season with pepper. Add chopped chili peppers and mix well (I sometimes add chopped herbs, maybe coriander, mint or parsley). Stuff the peppers with the cheese mixture and chill for a few hours. Cut into thin slices with a sharp knive and serve on cracker as finger food, OR do not chill but dip into a batter (2 egg yolks whisked with a tablespoon of flour, 2 whites whipped stiff with a pinch of salt and folded into the yolk mixture), deep fry in hot oil till golden brown.
