Here's a recipe to try.

Wessel Date:1995/07/09 Forum:rec.food.cooking Raisin Filled Cookies From Old Family Recipe c.1880 Filling 3 cups chopped raisins 1 1/2 cup water 1 1/2 cup sugar 6 heaping teaspoons flour 3 teaspoons lemon juice Mix in heavy bottom sauce pan over medium heat stirring constantly until the mixture boils. Cool mixture to room temperature. Cookie 7 cups flour 2 cups milk 6 teaspoons baking powder 4 teaspoons vanilla 2 cups sugar 1 cup shortening 1 teaspoon nutmeg Mix all ingredients, chill for several hours or overnight. Roll to 1/4 inch thick. Cut in 2 1/2 to 3 inch circles. Place filling in the center of one circle, cover with another and seal the edges with a fork. Bake at 400 degrees F. for 8 to 10 minutes. They should be very light brown. Cool before serving. The filling is very moist and will burn. Dough will be very soft. Add only enough flour, if needed, to roll the chilled dough.
This makes a very large batch. I have eaten similar cookies with a cherry filling in Hancock, Maryland. Not yet tried to duplicate this filling. Don.
