This came from the "Light & Healthy Microwave Cookbook." It's easy & delicious. I've used only this recipe for years! LOW FAT APPLE CRISP 5 Golden Delicious apples (peeled & sliced, about 5 cups) 1 Tablespoon lemon juice 3 Tablespoons packed brown sugar 1/3 cup quick-cooking rolled oats 2 Tablespoons flour 1 tsp. ground cinnamon 1/8 tsp. nutmeg 3 Tablespoons firm margarine
Arrange apples evenly in a square 8-inch microwave safe dish. Sprinkle w/lemon juice. In a small bowl, combine brown sugar, rolled oats, flour, cinnamon and nutmeg. Cut in margarine until mixture is crumbly. Sprinkle over apples. Cover tightly (I use plastic wrap). Microwave on 100% power (HIGH) for 5 minutes. Uncover; microwave on 100% power (HIGH) 3-4 minutes or until apples are fork tender. Serve warm. Makes 6 servings. Fat= 4.8gm per serving. This is good to reheat for later, too. Enjoy!
