but I have this in an old book.

Honeyed Beets

2 pounds strained honey
5 pounds beets, cooked and peeled
2 teaspoons ground ginger
2 teaspoons lemon juice
1 pound chopped walnuts, optional

Bring honey to boiling. Slice the cooked beets and add to honey
with ginger and lemon juice. cook until thickened, stirring
frequently; then add nuts and cook about 10 minutes. Turn into hot
jars and process. Makes 4 pints.
