I LOVE these sandwiches. I discovered them at one of my favorite NY hot spots, ODEON in Tribeca. 2 large portabello mushrooms, cleaned with a mushroom brush or towel (never, never, never clean mushrooms in water!) sliced red onion soft goat cheese (such as chevre, Montrachet etc.) arugala 2 country style rolls or hard, deli rolls Grill 2 large portabello mushrooms in a hot skillet with olive oil. Toast the rolls. Onto each roll place one mushroom, spread with the goat cheese, top with red onion and arugala. (You can also grill the red onion and arugala, for a grilled veggie sandwich)
