This does not have the pineapple in it but it is a very good cake! Hope you can use it.
SWEET POTATO CAKE
2 cups Red Band all-purpose flour** 4 eggs 2 cups sugar 3/4 vegetable oil 2 tsp ground cinnamon 1 1/2 tsp pumpkin pie spice 1 can (18oz) vacuum pack sweet potatoes, drained or 2 cups cooked sweet potatoes 1 1/4 tsp baking soda 1 cup chopped nuts 1 tsp salt 1/2 tsp baking powder 1 tsp vanilla Easy Creamy Glaze (below)
Heat oven to 350F. Grease and flour 12-C bundt pan or tube pan. Beat all ingredients except Glaze in large bowl on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 3 minutes, scraping bowl occasionally. Pour into pan. Bake 50 to 60 minutes. Cool 10 minutes: remove from pan. Cool completely. Drizzle with Glaze.
**If using RB self-rising flour, decrease baking soda 1/2 tsp and salt to 1/2 tsp. omit baking powder.
EASY CREAMY GLAZE 1 cup powdered sugar 1/4 tsp salt 1/2 tsp vanilla About 1 tbsp water or 1 1/2 tbsp cream
Mix sugar, salt and vanilla. Stir in water until mixture is glaze consistency.
