I ran across this recipe today and thought of all the crumbled chips at the bottom of the bag that no one wants to eat - and I'll bet there's a lot of them around these days after the holiday!
1 cup butter or margarine, softened 1/2 cup sugar 3/4 cup crushed ridged potato chips 1/2 cup ground pecans 1 tsp vanilla extract 2 cups all-purpose flour
In a mixing bowl, cream butter and sugar. Stir in potato chips and pecans. Add vanilla; mix well. Stir in flour just until dough pulls away from the sides of the bowl and forms a ball. Shape into 1" balls; place 2" apart on greased baking sheets. Flatten with a glass dipped in flour. Bake at 350* for 12 - 15 minutes or until lightly browned.
Makes about 5 dozen.

It brought back memories of when my children were small and I made these cookies.....they still laugh and talk about the fact that mom will make anything into cookies! As I recall I did add chocolate chips to these once in awhile. Enjoy!
1 c. brown sugar 1 c. white sugar 2 c. flour 1 c. shortening 2 eggs 2 c. crushed potato chips 1 c. chopped nuts 1/2 tsp. salt 1 tsp soda 2 c. oatmeal 1 tsp vanilla
Cream sugar & shortening. Add eggs & vanilla. Add dry ingred.to cream mixture. Add nuts, chips and oatmeal. Bake at 375 degrees for 10 to 15 min. You can also add chocolate chips, dates and/or raisins.
