Rolled Sugar Cookies

2 T butter, room temp.
2 egg whites heated to lukewarm
1/3 c sugar
1 t vanillaPress
1/2 c minus 1 T flour

Preheat oven to 425 degrees. Place shelf in middle of oven. Beat butter until fluffy. Beat in whites. While beating, add sugar and vanilla. Beat in flour. Grease and lightly flour cookie sheets. Drop 1 very full teaspoon of batter at a time, 5" apart, on sheets. Don't make more than 6 at a time. into very thin 3" circles. Bake 6 minutes. Remove with spatula and immediately roll into tube. Cool on racks. Makes 1-1/2 dozen.
