POTATO CRACKERS
100g rolled oats 100g flour 80g butter 2 medium potatoes cooked and mashed
Combine oats and flour in a bowl. Rub in butter with fingertips, then knead in mashed potatoes to form a stiff dough. Carefully roll out on a floured board, and cut out thin rounds using biscuit cutter or upturned glass. Cook on greased trays at 180 C for 20 minutes or until biscuits are crisp and lightly browned.
Makes approx. 20 biscuits
