Hi, My Mom is Italian (Sicilian), and here two family recipes. We were all born and raised in New Jersey. One is Ricotta Filling for St. Joseph's Day Cream Puffs. The other for Cannoli Filling. These I make, as well. There is a family recipe, which is used for regular Cream Puffs. I do not have this one, as I let my Mom and Aunts make them! RICOTTA (ST. JOSEPH'S DAY) CREAM PUFF FILLING
1 LB. Ricotta Cheese 2 TBS. miniature chocolate chips 1 TBS. candied orange peel, cut fine 1 jigger creme de cacao or any other liqueur 2 TBS. sugar Cream Ricotta cheese well; add chocolate chips,orange peel,creme de cacao and sugar. Mix Well.
AUNT ROSE'S CANNOLI FILLING
3 LBS. Ricotta 1 3/4 cups sifted confectioners sugar 1/2 tsp. Cinnamon 2 TBS. chopped citron 1/4 cup semi-sweet chocolate bits
Beat Ricotta in a large bowl for one minute. Add sugar and beat until very light and creamy, about 5 minutes. Add Cinnamon ,citron,and chocolate, and mix until throughly blended. Keep this filling in refrigerator until ready to use. It may be prepared a day ahead of time. Makes enough to fill 25 Cannoli.
