SPINACH FRITTATA
Serves 4 1/4cup margarine/butter 2 large potatoes, cubed 11oz English spinach, shredded 6 extra large eggs pepper to taste 1/2cup grated parmesan cheese Heat margarine in a heavy based pan, add potatoes & cook till lightly golden & crisp. Add spinach & cook till wilted & liquid has evaporated. Beat the eggs till combined. Add pepper & cheese. Pour mixture over potatoes & spinach & cook over low heat till mixture starts to set. Meanwhile preheat broiler. Place pan under broiller & cook frittata for 3-4mins or till cooked on top. Serve cut into wedges.
