Jeff, Thank you for the Pesto recipe! I copied it, along with your tomato sauce recipe, to try on my next pizzas. I just got a good deal on some shrimp, so as soon as I collect some other fish and seafood I will try the pesto as a base for a cheesy fishy garlicky pizza - can't wait. I also will not be using the mortar and pestle, though, I think I will try my food processor. :) No worries about the weights, as I also have a small scale for the kitchen. Keep us posted on new pizza and other culinary experiments!
