Spam Casino

I was just thinking about this appetizer that a friend, over 20 years ago made for me. At the time she said her uncle liked to mess around in the kitchen and he came up with the recipe himself and named it Spam Casino! It certainly is good and can be used as a sandwich spread also, not just as an appetizer.

Grind together (I use one of those old fashioned turn the handle grinders):
1 (1 pound) brick of VelveetaŽ cheese
1 green pepper
1 medium onion
1 tin of SpamŽ

Spread on English muffin halves and put under the broiler for about 5-6 minutes...careful to get browned on the edges only. Cut into quarters and serve warm.

People love these but they really look at you strangely when you tell them it's Spam.
