I'm not sure this is an Indian pudding, but it is baked and does use maple syrup.

HASTY PUDDING

3/4 c maple syrup
1/3 c water
1 c flour
1 1/2 tsp baking powder
1/2 tsp salt
1/4 c brown sugar
1/2 c milk
1 tsp vanilla
1/4 c melted butter
1/4 c chopped nuts or raisins

Preheat to 350*. Combine syrup and water in saucepan, and bring to a boil. combine remaining ingredients, except raisins or nuts, and mix until smooth. Pour batter into a greased 1 qt. casserole. Sprinkle with 1/4 c raisins or nuts.
Pour the boiling syrup-water mixture over batter. This makes sauce in bottom of the pan when the pudding is baked. Bake for 35 ot 40 min. Serve with light cream. Makes 4 to 6 servings.
