Easter Bread - Pane Di Pasqua
At Easter, eggs are an important symbol of life and birth and most Italian Easter dishes feature them. To children and adults alike, the whole eggs which are baked into loaves of Easter bread seem to be a magical secret. My younger brother, Rob and I would ask nana each Easter, ‘How'd you get the Easter eggs into the bread like that?' Read the recipe below to discover nana's "secret".
I now live in a city where there is still a large Italian population and many Italian bakeries. During the week preceding Easter Sunday, I smile as I walk past the bakery windows which are filled with Easter bread and I remember how nana would sometimes shape the loaves into Easter baskets. Today, I carry on the tradition and make this bread at Easter time, much to the surprise of nana who asks me jokingly, ‘How'd you get the eggs into the bread like that?'
