The cookbook 'Sweet and Sugarfree' by Karen E. Barkie is full of all natural, fruit sweetened desserts. It has cakes, cookies, crackers, pretzels, puddings, etc. Several recipes use applesauce or juice, and several use bananas. I am not a diabetic but I would think the recipes would qualify, or be easily adapted.

Here is one recipe from the book

GRANDMA'S APPLESAUCE CAKE

1/4 C butter, softened
3 large eggs
1/2 c apple juice
1/2 c unsweetened applesauce
2 c unbleached white flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 c raisins, optional

1 fresh apple, peeled, cored and thinly slicedTopping: unsweetened apple sauce, warmed over medium heatIn a medium sized bowl, beat together butter, eggs, juice, and applesauce until creamy. Add flour, baking powder, baking soda, and cinnamon. Beat well. Add raisins if desired

Oil and flour 8" square baking pan. Line the bottom of the pan with thinly sliced apple - one layer deep. Spoon the batter over the apples and smooth the top. Bake for 25 to 30 min at 350 or until well browned. Invert on wire rack with apple side up. Serve apple side up with warmed applesauce on top. Sweet and Sugarfree by Karen E. Barkie
