Hi Jan, hope you like this. It's one of my favorite of the many versions which exist for this dish. Buon' apetito amica!
TIRAMISU
24 Italian ladyfingers a.k.a. Savoiardi - about one pound
6 eggs, separated - be sure to use very fresh, refrigerated eggs
1 pound mascarpone cheese
1/3 cup sugar
1 teaspoon vanilla
1 1/2 cups espresso coffee
1/3 cup brandy or dark rum
shaved or grated chocolate

1 large mixing bowl
1 medium mixing bowl
shallow bowl
deep glass dish

Beat egg yolks while adding sugar until very light. Mix in the mascarpone.
In a separate bowl, beat egg whites until they form soft peaks. Gently fold whites into the yolk mixture.
In a shallow bowl, mix together the coffee and brandy. Quickly dip ladyfingers into the mixture being careful not to over soak them, or they'll be too soggy.
Using a deep, glass baking dish, make a single layer of the coffee and rum soaked ladyfingers.
Spread the mascarpone mixture over this layer and sprinkle with chocolate. Continue making layers until you've used all the ladyfingers. End with a layer of mascarpone with chocolate shavings on top.
Cover and refrigerate until chilled.
To serve, cut into squares.
