Hi Shirl, I am going to share two different recipes with you. The first is our families recipe and the second is MY version, when I am rushing to and from Football practice and games! Both are very good. Hope these will help. Patty
CHICKEN CACCIATORE (hunter in Italian,hunter style sauce) 2 medium onions, sliced 2 cloves garlic,minced 2 tablespoons cooking oil 1 2 1/2 -to 3-pound broiler-fryer chicken cut up 1 16oz. can tomatoes, cut up 1 8oz. can tomato sauce 1 medium green pepper, cut into 1-inch pieces 1 2 1/2-ounce jar sliced mushrooms drained 2 bay leaves 2 teaspoons dried oregano or basil crushed 1/2 teaspoon dried rosemary crushed 1/4 cup dry white wine Hot Cooked rice (white) 1 tsp. salt 1/4 tsp.pepper
In a large skillet cook onions and garlic in oil over medium heat until onions are tender. Remove onions; set aside.Add more cooking oil to skillet, if needed. In same skillet brown chicken pieces over medium heat about 15 minutes , turning to brown evenly.
Return onions to skillet. Combine undrained tomatoes, tomato sauce, green pepper, mushrooms, bay leaves,oregano or basil,rosemary, 1teaspoon salt and 1/4 teaspoon pepper. Pour over chicken in skillet. Cover and simmer for 30 minutes. Stir in wine, cook uncovered, over low heat about 15 minutes longer or until chicken is tender, turning occasionally. Skim off fat; discard bay leaves. Transfer chicken and sauce to serving dish. Serve with hot cooked rice. Makes 4 servings.
EASY CHICKEN CACCIATORE 2 1/2 Lbs. frying chicken pieces 2 Tbs. oil (more if needed) 1 envelope Good Seasons Italian Salad Dressing Mix 1 Small can tomato sauce 1 medium Green Pepper,sliced 1 4oz. can Mushrooms Brown Chicken in oil, add rest of ingredients, cover, simmer 1/2 hour. BUON APPETITO!
